Cucumber and Cabbage Rice Noodles with Peanut Sauce
Ingredients:
- 1 large cucumber, chopped
- 1/4 cabbage head, thinly sliced
- 1 package of rice noodles
- 1 bottle of peanut sauce (I like House of Tsang Bangkok Peanut Sauc, but you can make it yourself too)
- Cock sauce (optional)
Cook rice noodels according to package directions. Toss with peanut sauce, cucumber and cabbage and serve.
Fiesta Baked Potato
Ingredients:
- 2 large russet potatoes
- 2 T Tofutti sour cream
- 1 15 oz can of black beans, drained and rinsed
- ½ cup salsa
Cook potatoes in microwave until soft on inside. Add black beans, Tofutti sour cream and salsa.
Greens with dried fruit and nuts
Ingredients:
- Your choice of field greens (City Market has great pre-packaged field greens and spinach but if you're on a tight budget grab some bulk spinach and red or green leaf lettuce, clean and combine at home)
- Raisens and dried cranberries (you can buy these in bulk at Vitaimin Cottage)
- Walnuts or almonds (Vitamin Cottage has these on sale every once in a while -- stock up and put them in your freezer or fridge)
- Amy's Goddess dressing or any other vegan favorite (Drew's also makes great vegan dressings). It's also easy to make your own vinegarette with olive oil, balsalmic vinegar, salt and pepper
Toss all ingredients together.
Avocado Veggie Burger
Ingredients:
- 4 slices of whole grain bread
- 2 vegan Boca burger patties
- 1 avocado, sliced
- 2 onion slices (optional)
- favorite burger toppings (I use Vegannaise and jalapenos)
Toast bread. Place patties in skillet and heat medium-high. Assemble burger. Serve with a side salad or fruit.
