Breakfast


Tofu Scramble (my favorite breakfast)
Ingredients:
  • 1 block of firm tofu, mash with fork
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • 1 box of tofu scrambler mix by Fantastic Foods
  • whole wheat tortillas
  • salsa
  • 1/2 - 1 can of vegetarian refried beans
  • 1 T of olive oil
Put olive oil in a pan on medium.  Add onion and bell pepper and cook until slightly soft (about 4 min.).  Add tofu and tofu scrambler mix and stir.  Let ingredients combine on low-medium heat for about 10 min.  Add to torilla with refried beans and salsa.

Pancakes
Ingredients:
  • 1 1/2 cups unbleached flour
  • 2 T raw sugar
  • 2 t baking powder 
  • 1/2 t salt
  • 3 t ground flaxseeds
  • 4 T water
  • 1 1/4 cup soymilk 
  • 1 t pure vanilla extract
  • 3/4 cup blueberries or other favorite fruit 
  • 1/4 cup almonds or other nut (optional) 
Combine dry ingredients in a large bowl.  Mix water and flaxseeds until thick.  Add remaining wet ingredients.  Stir in dry ingredients and then add berries and nuts.  

Cook in a skillet on medium heat.   Serve with real maple syrup!  

Sweet Potato Fajitas (a recipe from a law school friend, Amber)
Ingredients: 
  • 1 large sweet potato, cubed 
  • 1 large yam, cubed
  • 1/2 onion, chopped
  • 1 bell pepper (your color of choice), chopped
  • 1 T olive oil
  • 2 t garlic powder
  • 2 t basil
  • 1 t fennel 
  • salt and pepper to taste
  • 1/2 can refried beans 
  • whole wheat tortillas
  • salsa (optional)
  • Tofutti sour cream (optional)
In a large skillet on medium-high heat, add onions and potatoes.  Add seasnonings.  Cook potatoes until brown and soft.  Combine with heated refried beans on tortilla and add toppings of choice. 

French Toast
Ingredients:
  • 1 cup of soymilk (I use plain) 
  • ½ cup whole wheat pastry flour
  • 1 T maple syrup
  • 1 t vanilla extract
  • 1 t cinnamon
  • 6 slices of whole grain bread
  • 1 T Earth Balance   
  • 2 bananas, sliced 
Combine soymilk, flour, maple syrup, vanilla and cinnamon in a food processor or blender.  Blend until smooth.  Soak bread slices in batter until soft (not soggy).  Heat skillet on medium-high and add Earth Balance.  Cook battered bread until brown on both sides.  Add maple syrup if desired.  Serve w/side of sliced bananas.
