Ruth's Chocolate Chip Oatmeal Cookies
Ingredients:

  • 1 1/4 cup flour
  • 1 cup brown sugar
  • 1/2 t baking soda
  • 1/2 t salt
  • 1/2 cup Earth Balance, softened
  • 1 t vanilla
  • 1/4 cup applesauce
  • 1 cup oats
  • 1/2 cup peanut butter
  • 1/2 cup vegan chocolate chips

Heat oven to 350.  Combine all ingredients except oats and chips.  Blend well and then add oats and chips. Spoon onto non-stick baking sheet.  Bake for 15-20 minutes.   

Carrot Cake

Ingredients:

  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 cups flour
  • 1 t salt
  • 1 t cinnamon
  • 1 t baking powder
  • 1 t baking soda
  • 3 cups finely shredded carrots (I use a food processor--but be careful not to turn them into juice)
  • 3/4 cup veggetable oil
  • 3/4 cup apple sauce 
  • 2 t vanilla
  • 4 egg substitute 
  • 1/2 cup chopped nuts (optional)

Ingredients for icing:

  • 3 ounces of Tofutti cream cheese
  • 1/4 cup Earth Balance
  • 1 t vanilla
  • 1 1/2 cups powdered sugar

Preheat oven to 325.  Mix the dry and wet ingredients and separate bowls and then combine dry to wet, stirring as you add the dry mixture.  Add batter to 10X9 cake pan and bake for 45 minutes or until center is cooked.  

Icing -- melt Earth balance in sauce pan on stove.  Add the other ingredients and stir well.  Let cool.  Spread on cake once cake has cooled.
